“Sketch and Structure Once we've defined the length of the of the base, that is, the centimeters the base must have. Always remember we're working on a profiled base, the cake profile. We're going to be translating this length to what would be the plan for our base, this may be one of the most complicated steps. Why? Because it's a three-dimensional piece. We've three dimensions and here we're simply playing with the side. So how can you translate this base, which here is just a line, into this volume? That's a great question that I often ask myself.
