“Assembling the Cake In this lesson, I'm going to teach you how to assemble your cake. First of all, let me tell you what kind of cake you want to carve, what kind of cake you don't. I have some examples here. I have this chocolate cake, this sponge cake, and a couple of variations on the same recipe for a Genovese cake. So these two cakes are the good ones. Both the chocolate cake and the sponge cake have three defining features. Number one, moisture. Number two, richness. Three, they get thicker when cold, but at room temperature, they get softer.
