“Painting In this lesson I will explain how to paint with edible colorants. First of all, I want to tell you the qualities of a good food coloring. I have this brand, Rainbow Dust. They are gel dyes. In creative pastry we have liquid dyes, gel dyes and paste dyes. I will use gel. The difference between them: liquid dyes are water-based, they are very fluid. Gel ones have a much denser texture. And paste dyes, as the name suggests, are a paste. To dilute we use gel and paste, although gel is more easily diluted because the base is glucose. Liquid colorants do not usually dye very much.
