“Salad Now we'll make and style the salad course. This course will be an avocado salad with some tomatillos, some seeds, dried herbs, fresh herbs and some purslane as well. First, I'll discuss some tips to make your ingredients look fresh, especially if you're working on a set or if you want to pre-prepare anything. For example, greens, buy them the day they're needed, if you can. They look bright, alive and fresh.
