“We’ve come to the end of the course and I’ve loved teaching you and I hope you’ve enjoyed it. Your final project will be to make your own chocolate using a silicone mold around an object of your choice. You can design your piece using any of the designs learnt in the course and with your own flavourings. You can also use textures and play with colour as you choose. Let's go over the main steps of the process. First, prepare your cooking space and materials. Then, create a mold around the objetc of your choice as I showed you in Unit 3. In the course, I used a nice pleated tile, but I encourage you to be creative and find something unique for your project.

Once your mold is ready, it's time to temper, colour and flavour your chocolate. You can apply a texture of your choice to your design by using baking paper. Don't be afraid to explore what colours and flavours you find exciting. We learned several designs that you can add to your chocolate but play with them and make them your own.
Pour the chocolate into the mold and let it set. When the slab has fully crystallised for at least 24 hours, take it out of the mold.
Your chocolate slab is ready! Now you just need to think of a beautiful sustainable packaging to present your work.
Now I’m very excited to see your creations using what I have shown you today - especially the ones that went wrong! The most important advice I can give you is to be curious and not be afraid of working with chocolate - just treat it like a material like any other. No matter how it looks it will almost always taste amazing. I would also love to hear about other texture and material projects not necessarily related to chocolate. Maybe we can work out how to create it in chocolate? I will be following your progress on the Domestika forum, but please be patient if I don’t reply immediately as I am quite busy running my own chocolate business. But please know that I will look at everything and reply as soon as possible. Please also take inspiration from other students and give advice and tips.
