“We have now reached the end of this Sugar Flower Bouquet course. I hope you have found it beneficial and can apply the knowledge acquired to further develop your sugar flower making skills. I gave you a little insight into my life and cake journey to pass on the message that it’s never too late to try something new or to make a career change. The materials may seem daunting but again use items you already have around the home, to keep costs down, if this is a new hobby. Just to give you a few examples. Instead of rose petal cutters, use round cutters. Instead of a steamer, use a kettle or pan of boiling water. Everything can become a tool with creativity. I would like to make a brief recap of what we have seen during the course. The classic rose lesson in Unit 3, is a medium-sized sugar flower that can have another layer of petals should you want a larger finish or use the same layers of petals on a larger polystyrene bud. Or a small bud for a smaller rose. The open peony needs to look fluffy and ruffled and the trick is to ensure you use the veining stick and ball tool correctly.

The centre of the David Austin rose in Unit 4 varies greatly, so try to look at some of the other variations of this flower and arrange the central petals accordingly. If you want a more open rose, then cut the polystyrene ball further down, or for a more closed one, only remove a small amount. For the final (but essential) details, I taught you how to dust your dry sugar flowers, this step may be optional but it is an effective way of adding depth, character and realism. Remember to use a soft rush, dust sparingly and build up your colours from the lighter tones, gradually adding the darker colours.
Finally, when attaching your sugar flowers onto your cake, refer back to your sketch but also don’t be afraid to make any necessary changes. Often the size of the florals on the cake can be a lot bigger than the sketch, so it may mean you use fewer sugar flowers and more filler flowers like berries or leaves to fill in any gaps. It’s therefore always important to make extras for filling gaps but also for backup, should there be any breakages. Once your masterpiece is done, don’t forget to take good quality pictures. This doesn't need to be expensive. Good lighting, plain background and a decent phone camera.
Remember the result and outcome of this class are entirely up to you and needs to reflect choices you have made from the design of your cake to the floral arrangements and also the colour choices. Even the size of your sugar flowers should be your choice, depending on the final composition. All my cakes are bespoke and therefore no two cake designs are the same. I, therefore, expect to see the same from my students. I want you to produce work that is unique and individual to you, using everything I have taught you and also using all the resources and attachments I have provided in the course.
