“Extracting Pigment from an Avocado Pit In this lesson, you will learn how to extract pigment from an avocado pit. For this lesson, we'll use a Hass avocado. What you do is grate the whole pit. If the outer skin bothers you, you can remove it. It can be hard to remove from some pits, but it can be practical. At this point, you can stop so you don't hurt your hands.
