You probably already have your head done whether with darts or a gusset, or a double-sided head, or you made it together with the body straightaway. If you do it as one detail, a head and a body, you stitch both sides after you've done gussets or darts. You stitch it together, turn it inside out, and stuff through the opening for stuffing.
