Joe Lilly

Hi, I am Joe Lilly, an American living in Croatia. My wife and I have a small BNB here on the Dalmation coast. I have been cooking professionally since 1978. I went to culinary school and served an apprenticeship near Chicago and later studied cooking in Italy. I have taught culinary for many years as well as currently. I teach PT in a small island school about 6 hours from my home. I have also taught in American high schools. I am here because I feel my creativity especially with plate design is old and unimaginative. Honestly, it was never my strong suit but I will be taking a high school team to competition this year and really want to improve my plate presentation. I really don't like a lot of the new presentations that serve very little food and 4 drops of sauce. I am very impressed and inspired by your food and words. Thank you. I am looking forward to class but am also very intimidated to be honest.
