ESTHER MERINO

I'm a Beverage Developer, using different technics as fermentation (kombucha, water kefir, kvas, koji, etc), distillation at low temperatures and pressure, centrifugation, ultrasonic homogenisation, to name a few. I think Sustainability is not an option if not a logical way to understand and develop beverages, and at the same time is a path full of creativity and new concepts. I'm enthusiast of foraging and understanding deeper how we can use plants, flowers, seeds, roots and fruits to create new products and culinary uses of them. One of the things I like the most is to draw the whole concept of the beverage by representing the ingredients, the process, the final product and the label through draws.
