Hi, I didn't publish the sketch because it was really bad, I don't know how to draw at all, besides a sketch in black and white doesn't have much meaning for me, I can see things in color and when I put them on the table, only then I understand if they work, however I modified it while taking the photo. I have been taking Still Life photos for a few years now, food is not a priority for me even if I put it mainly in the form of fruit. I am interested in your opinion on this photo, to know if it is okay or if I should change it and how.

Let's go there with my opinion about your final project ;)
Regarding what you say about the sketch, you can color it perfectly, in fact sometimes if I have time I do it because this way it is much more visual and helps to understand everything better. Also a trick that you can use if you don't want to stop at giving color to everything, is to make color stains, in order to understand what color is everything.
To begin with, I will tell you that I really like the final result. The color palette you have used is one of my favorites, I use it a lot in my photos, I love it! I also really like the floral detail that you have included, it gives a lot of life to the photograph and creates a super interesting height in the composition.
I might have placed the flan/panna cotta at the front, to give it more prominence, but if food is not the priority for you, as you say, it may also be fine where you have placed it.
It would also give the photo a little more air, leave more space at the top and bottom and also undo some sugar cubes to give the scene more realism and naturalness, just like you did with the cookies.
Other than that, I think it's a great photo, congratulations!
