    Pastry Designer and Illustrator

    Joined June 2022

Rachel Levesque is a pastry designer and illustrator based in Lille, in the north of France. Winner of the television competition for the Best Pastry Chef in 2017, she had the bright idea of combining her two passions for pastry and illustration by launching her own brand Happy Pastille, with which she makes cookies and decorations for cakes.

She first began to paint on meringue, marshmallow, chocolate, before discovering that cookies are great mediums for expressing her creativity. Major brands such as Chanel, Clarins, and even Cabaïa have already succumbed to the childish and flowery charm of her creations.

    FAQs

This course is aimed at intermediate learners—perfect if you already have some baking or cookie decorating experience—but it’s still accessible if you’re motivated.

You’ll need baking tools (like a mixer, scale, and rolling pin), gel food colorings, suitable brushes, gold leaf, and standard ingredients for cookie dough and royal icing.

You’ll learn how to make perfect cookie dough, prepare and apply royal icing, master edible watercolor painting, create floral designs, and add finishing touches like gold leaf.

Yes, it’s recommended to have fine brushes, gel food colorings, vodka to thin the colors, a piping bag, and optionally accessories like gold leaf.

Painting on cookies uses edible food colorings and materials, with techniques tailored to the texture of the icing and food safety.

Gel food colorings are recommended because they don’t change the icing’s texture and provide vibrant, precise colors.

The dough should be smooth, lightly kneaded, and well-chilled before cutting. Royal icing requires precise measurements and can be adjusted in texture depending on how you use it.
